Recipe:
1. Prepare the Dough:
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and nutmeg (if using). Set aside.
- In a large bowl, cream the butter and sugar together until light and fluffy.
- Add the egg, buttermilk, and vanilla extract to the butter mixture, and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft, sticky dough forms.
2. Shape the Donut Holes:
- Lightly flour your hands and shape small portions of dough into 1-inch balls. (Alternatively, you can use a small cookie scoop to portion the dough.)
- Place the dough balls on a parchment-lined baking sheet and refrigerate for 10–15 minutes to firm up.
3. Fry the Donut Holes:
- Heat about 2 inches of oil in a deep frying pan or pot to 350°F (175°C). Use a thermometer to maintain the temperature.
- Carefully drop a few dough balls into the hot oil, being sure not to overcrowd the pan.
- Fry for 2–3 minutes, turning occasionally, until golden brown and cooked through.
- Remove the donut holes with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.
4. Make the Glaze:
- In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.
5. Glaze the Donut Holes:
- While the donut holes are still warm, dip them into the glaze one at a time, coating evenly.
- Place the glazed donut holes on a wire rack set over parchment paper to catch any drips.
