Recipe:

1. Prepare the Dough:

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and nutmeg (if using). Set aside.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the egg, buttermilk, and vanilla extract to the butter mixture, and mix until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft, sticky dough forms.

2. Shape the Donut Holes:

  1. Lightly flour your hands and shape small portions of dough into 1-inch balls. (Alternatively, you can use a small cookie scoop to portion the dough.)
  2. Place the dough balls on a parchment-lined baking sheet and refrigerate for 10–15 minutes to firm up.

3. Fry the Donut Holes:

  1. Heat about 2 inches of oil in a deep frying pan or pot to 350°F (175°C). Use a thermometer to maintain the temperature.
  2. Carefully drop a few dough balls into the hot oil, being sure not to overcrowd the pan.
  3. Fry for 2–3 minutes, turning occasionally, until golden brown and cooked through.
  4. Remove the donut holes with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.

4. Make the Glaze:

  1. In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.

5. Glaze the Donut Holes:

  1. While the donut holes are still warm, dip them into the glaze one at a time, coating evenly.
  2. Place the glazed donut holes on a wire rack set over parchment paper to catch any drips.
