Recipe:
- Preheat the oven:
- Set your oven to 400°F (200°C).
- Prepare the filling:
- In a large skillet, melt the butter over medium heat.
- Stir in the flour and cook for 1 minute, creating a roux.
- Gradually whisk in the chicken broth and milk to form a thick, creamy sauce.
- Add garlic powder, onion powder, salt, and pepper.
- Stir in the cooked chicken, frozen vegetables, and diced potato (if using). Simmer for 5 minutes, then set aside to cool.
- Prepare the crust:
- Roll out your pie crusts if they are not pre-rolled.
- Line individual ramekins (or a large pie dish) with the bottom crust, leaving some overhang.
- Assemble the pot pies:
- Spoon the chicken filling into the crust-lined dish(es).
- Cover with the top crust and pinch the edges to seal. Trim any excess crust.
- Cut a few small slits in the top for ventilation.
- Brush the top crust with a beaten egg for a golden finish (optional).
